Among the many traditional delicacies, the Virșli sausage stands out as a regional specialty from the counties of Hunedoara and Alba in Transylvania. Virșli is made from a mixture of mutton or goat meat blended with pork and encased in a natural protective casing. This traditional product resembles thin, elongated sausages but is packed with a distinctive flavor.
Smoked, baked, and spiced with paprika and garlic, each recipe varies not just by region, but from family to family, making it impossible to standardize as a geographically protected product.
The recipes from the Gate of Transylvania
In the small village of Șiglăul Mic, located in the Jiu Valley, County of Hunedoara, the process begins with finely grinding fresh mutton and pork fat. This mixture is seasoned, combined, and left to rest for 24 hours. The meat is then kneaded again, with more spices and salt added to taste. The bones are boiled to extract gelatin, which is mixed into the meat before it’s stuffed into original sheep casings. Meanwhile, a fire is prepared in the oven for baking the Virșli. After baking and smoking, the sausages are cooled and vacuum-sealed to preserve their tenderness. Virșli can be enjoyed either boiled or grilled over hot coals. To boil, simply bring water to a boil, add the sausages, and cook until they float to the surface, signaling they are ready to eat.
Every local producer in Transylvania, particularly in Jiu Valley, Hunedoara, uses a unique recipe handed down through generations since the time of the Geto-Dacians, hence the name “The Geto-Dacian’s Sausage”.
